Birria Carrillo is a must-visit gem nestled in the heart of San Pedro Tlaquepaque’s lively Centro district. Specializing in authentic Mexican birria, this restaurant serves up a truly memorable culinary experience that celebrates the rich flavors of Jalisco’s traditional cuisine. From the moment you step in, you're immersed in an inviting market atmosphere where the tantalizing aroma of slow-cooked meats beckons you closer.
The star of Birria Carrillo's menu is undoubtedly its Birria de Ternera and Birria de Chivo Grande, each dish showcasing tender, fall-apart meat expertly stewed in a complex, deeply savory sauce. Whether you choose the delicate beef or opt for the rich goat birria, you’re in for a flavor explosion that’s complemented perfectly by freshly made handmade tortillas. The Eats don’t stop there — the Birria Combinada Res Chivo Y Ternera Carnaza Y Costilla offers a hearty mix of beef, goat, and ribs, delivering layers of textures and tastes in every bite.
What truly sets Birria Carrillo apart is its commitment to tradition and quality. The sauces, like the intensely flavorful salsa de tomate, bring a perfect balance of spice and acidity that enhances the succulent meats. Reviewers consistently praise the perfect seasoning and tenderness of the meat, emphasizing how each serving is elevated by the warmth and freshness of their hand-pressed tortillas.
The service adds to the overall charm — Nacho and his brothers warmly welcome guests, making the dining experience as authentic as the cuisine. English-speaking customers will find it easy and enjoyable to engage with the friendly staff, ensuring everyone feels at home in this bustling market setting. Diners note that while the space is simple and sometimes warm, the flavor and hospitality more than make up for it.
One patron found the birria so delicious that they literally forgot to take photos, a true testament to the mouthwatering quality that captures full attention from the first bite to the last. Another highlighted the unbeatable value, where a generous plate of mixed meats and quesabirria can be savored for just around 150 pesos per person, making it accessible without compromising authenticity or taste.
In short, Birria Carrillo is not just a restaurant but a celebration of Tlaquepaque’s culinary heritage. For those seeking bold, authentic flavors served with genuine warmth in a casual market environment, this is a destination worth hunting down. Whether you're a local or a traveler eager to explore traditional Mexican birria, Birria Carrillo promises an unforgettable and richly satisfying meal.

A fantastic market dining experience. A choice of goat or beef (I think veal) birria - both absolutely excellent, delicious consume and meat falling apart. The man serving spoke good English which was a real bonus for me and my partner, as we sometimes struggle in markets. He was so so friendly, made a real difference. And it was also excellent value.
So Good I Forgot to Take Photos! I can’t believe I dove right in without taking a single photo—and honestly, the food was so good I couldn’t stop long enough to take one! The food alone is reason enough to go back but now I have another. Birria Carrillo is absolutely worth hunting down. It was a little tricky to find, but once I got there, it was everything I hoped for: authentic and flavorful. You might be the only foreigner there, but if you speak Spanish and love real-deal local food, get in there.
